Oyster farmers hang their pre-bound oyster strings on the oyster racks. During low tide, a significant portion of the oysters is exposed above the water surface, allowing them to bask in sunlight for extended periods. This exposure enhances their flavor. As the tide recedes, rows of bamboo poles emerge from the water, creating a mesmerizing zigzag pattern across the wetlands. This unique spectacle is none other than the “Z-shaped oyster racks” found in southern Taiwan. During the evening, when combined with the enchanting hues of the sky, the scene becomes truly breathtaking.
